Maccheroni Republic is an all inclusive place where everyone is always welcome, the place where the wind of passion meets the knowledge of one of the most expert pasta makers on earth…we just don’t make pasta, we make magic happen. After years of research on the field we’ve selected exceptional variety of grains prioritizing non refined whole wheat flour harvested from the best farmers in the US. We took advantage of the locally sourced organic produce from various farmers market across California.

We proudly handcraft all of our fresh pasta daily using sustainable and organically grown heirloom grains such as Khorasan, Einkorn, Emmer, Spelt, Amber Durum. From our appetizers to our pastas and down to our desserts, we are happy to say that everything that comes from our kitchen is made in house.

Our core value is to treat everyone like family and when you come and dine with us you’ll definitely feel at home.

Hidden in plain sight just across from Grand Central Market, it is a known quantity with the local crowd, who fill these tables at all times of day. The array of excellent handmade pastas is seemingly endless, like long, tubular strands of bigoli della nonna, headlinng an impeccably balanced angus-and-sausage ragout. Then, try to pry yourself away from the noodle nexus and savory tomato-based sauces to savor freshly baked olive oil bread, deliciously paired with bites of polpettine di gamberi. Be sure to finish with a creamy affogato and be on your merry way.
